A place where care lives in every detail — from the first pour of coffee to the last crumb of croissant.
Sage opened its doors in late February 2024 in downtown Columbia, Missouri — stepping into the space formerly home to Coffee Zone on the corner of Broadway.
Founded by Kaitlyn Schlacks, Sage was born from a vision to create something warm yet refined — a neighborhood spot where everything is made in-house, nothing comes from a package, and every detail reflects care.
With a background in interior design and construction, Kaitlyn transformed the space into what you see today: exposed brick, dark woodwork, a crystal chandelier, and an atmosphere that feels both elevated and completely at home.
"Understated elegance — not pompous or pretentious, but signifying care, detail, and love."
At Sage, everything is crafted in-house — from butter-laminated croissants baked fresh every morning to slow-braised brisket bowls and house-roasted coffee. There are no shortcuts, no pre-packaged anything.
We source locally whenever possible, building relationships with farmers and producers who share our commitment to quality. Every dish represents a level of care that you can taste.
Whether it's a quiet morning coffee, a long brunch with friends, or an evening event under candlelight — Sage is designed to be the kind of place where you want to stay a while.
From first dates to family Saturdays, study sessions to celebrations — Sage has quickly become a gathering place for the Columbia community.
We host private events and candlelit dinners in our intimate space, and we love watching the same faces come back week after week. That's the whole point.
Whether you're a Mizzou student grabbing a matcha between classes or a family sharing a waffle on a Sunday morning — there's always a seat for you.
